Ingredients

    very ripe banana
  • 250 ml
    unsweetened almond milk
  • 60 g
    Coconut oil
  • 250 g
    oats (gluten-free if needed)
  • 2 tsp
    baking powder
  • 2 tsp
    Flavour Kick Vanilla
  • 150 g
    fresh blueberries

Preparation

    Preheat the oven to 180° C.

    Put the peeled banana into a large bowl and smash with a fork until it’s a smooth puree. Add the almond milk and liquid coconut oil and stir well.

    Blend the oats in a blender until they form a fine oat flour.

    Add the oat flour, baking powder and Flavor Kick into the bowl with the banana-coconut oil mixture. Mix until a smooth dough is formed.

    Fold in the blueberries. Fill the cups of a muffin form until ¾ full.

    Bake the blueberry muffins for 25 minutes.
