You will need

The recipe yields about 12 sandwich window cookies. One cookie has 104 kcal and 4g of protein.
50 ml cold water
30 g stevia
50 g corn starch
50 g ground almonds
50 g chestnut flour or buckwheat flour
30 g rice flour
1 TL baking powder
0.5 TL vanilla extract

The gates have opened for winter baking. Start your ovens for a batch of irresistible window cookies! And these homemade jammy dodgers are filled with a secret surprise: our creamy, spiced Gingerbread Protein Cream! What won’t you find in these sandwich cookies? Added sugar. In case that wasn’t enough to convince you… by the way, they’re gluten-free.


  • Add all ingredients to a bowl. Mix until they form a smooth dough. If the dough is too sticky, add more flour of your choice a bit at a time.
  • Roll the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.
  • reheat the oven to 175°C.
  • Dust your working surface with flour. Roll out the dough to a 2-3-mm thickness.
  • Using a round cookie cutter, cut circles in the dough (it should make enough for about 24). Use a smaller cookie cutter to cut smaller windows in half of the circles.
  • Cover a baking sheet with parchment paper. Place the cookies on the parchment paper and bake for 13-15 minutes.
  • Set the jammy dodgers aside to cool. Once cool, spread a half teaspoon of Protein Cream on top of each cookie without a hole. Cover with the cookies that have holes.
  • Dust the window cookies with powdered sugar if you wish.
  • Enjoy!
