Raspberry Gin and Tonic Cake

Sitting in the sunshine, sipping a gin and tonic – it’s one of the things that makes summer, summer. But what happens when you’re starting to get hungry for a refreshing snack right at gin o’clock? It’s exactly the right time for a gin and tonic cake! Fresh raspberries collide with Lyre’s Dry London Spirit. And the whole thing gets a bubbly flavor from our refreshing Wild Berry Energy Aminos. It’s a high-protein, refreshing cake with little sugar. We can promise you that this cake will catapult straight to the highlight of your next picnic in the park! We’ve made what’s called a poke cake. After it’s baked, you poke holes in the cake and drizzle more flavorful liquid over it. The holes ensure that the gin will make its way all the way through the cake, keep it moist, and cause an absolute flavor explosion!

Preparation

  • Preheat the oven to 180° C.
  • Grease a springform pan and set it aside.
  • Ingredients:
    125 g spelt flour, 125 g Instant Oats, 120 g stevia, 50 g Vegan Protein Vanilla, 2 tsp baking powder
    Put all the dry ingredients into a bowl and stir well.
  • Ingredients:
    135 ml Lyre's Dry London Spirit , 110 ml oat milk, 2 tbsp lemon juice, 50 ml Coconut oil, 1 pinch salt
    Add the wet ingredients to the dry ones. Use a mixer to beat together the ingredients until they form a smooth batter.
  • Ingredients:
    100 g raspberries
    Put the batter into the greased springform pan.
  • Bake the gin and tonic cake at 180° for about 35 minutes.
  • Set the cake aside for 10 minutes to cool. Then remove carefully from the form.
  • Ingredients:
    60 ml Sparkling Aminos Wild Berries, 3 tbsp lemon juice, 1 tsp Lyre's Dry London Spirit , 1 tsp Flavour Kick Vanilla
    Meanwhile, make the liquid. Put all the ingredients for the drizzle into a small bowl and mix well.
  • Poke lots of holes into the cake with a wooden skewer or the end of a wooden spoon. Drizzle the liquid over the top.
  • Ingredients:
    200 g vegan cream cheese, 100 g raspberries, 2 tsp Flavour Kick Vanilla, 1  lemon
    Now spread the frosting evenly over the top of the cake.
  • Enjoy!

Gin and Tonic Cake Variations

If you haven't got any raspberries around, you can make this cake without berries. Or you can switch them for different berries! A few blueberries will turn it into a blueberry gin and tonic cake. Or use our Peach Sparkling Aminos for a fresher note.
