Always had a soft spot for carrot cake? You’ll be over the moon to hear about our no-bake carrot cake. Low-sugar, vegan, and packed with nuts: Just how we like it and amazing as a snack for whenever.
Ingredients:Put the walnuts, Coconut Chips, almond flour, cinnamon, ginger, nutmeg, orange zest, Flavor Kick, and salt into a powerful blender. Blend until well-mixed.
Ingredients:240 g datesAdd the dates and blend again. It should form a crumbly dough.
Ingredients:150 g carrotsAdd the grated carrots and mix again.
Line a loaf pan with parchment paper and put the dough into it. Press in with your fingers and flatten the top. Put the no-bake carrot cake into the fridge.
Spread the frosting evenly over the carrot cake. Put into the fridge for at least 4 hours.
Before serving, cut the no-bake carrot cake into 9 even pieces.
Garnish with roasted nuts or coconut chips as desired.
