Have we mentioned this one before? Waking up first thing in the morning to a fresh-baked pie…. it sure sounds amazing. We make it possible with this recipe for homemade baked oats. The roasted pecans give this pie spinoff its nuttiness: a perfect match for your fall brunch plans.
Preheat the oven to 175° C.
Ingredients:1 tbsp White Chia Seeds, 3 tbsp waterMix the White Chia Seeds and water in a small bowl, making sure to get all the chia seeds wet. Set aside for 3-5 minutes to let them absorb the water.
Ingredients:480 ml oat milk, 125 g unsweetened applesauce, 2 tbsp Coconut oilMix all the wet ingredients, including the chia seeds, into the dry ingredients until well blended. Set aside.
Ingredients:50 g pecans, 1.5 tbsp maple syrup, 0.5 tsp cinnamonNow make the topping: warm the maple syrup in a pan on medium heat for about 2 minutes. Remove from the heat and add the other topping ingredients to the warm maple syrup in the pan. Stir well.
Line a loaf pan or other baking pan with parchment paper. Put the baked oats mixture into the parchment paper-lined pan. Smooth the top with a spatula, then spread the topping over it.
Bake the pecan pie baked oats for 35-45 minutes at 175° C, until they are golden-brown.
