Protein Pumpkin Spice Overnight Oats

You up for some pie first thing in the morning? Who are we kidding, who isn’t? This vegan recipe for high-protein pumpkin spice overnight oats makes it possible. You’ll have the ultimate pumpkin pie experience, without the baking. Topped with baked apples and fresh garnishes, these oats are the perfect way to get you going for your day.

Ingredients:160 g pumpkin puree, 100 g oats, 2 tbsp White Chia Seeds, 160 ml oat milk, 200 ml water, 2 tbsp lemon juice, 1 tbsp Vegan Protein Vanilla, 2 tsp , 0.25 tsp nutmeg, 0.25 tsp ginger, ground, 0.25 tsp cardamomPut all the ingredients for the overnight oats into a bowl and mix well. Cover the bowl and set aside overnight in the fridge.

Ingredients:1Peel and core the apple. Dice into small cubes.

Ingredients:0.5 tsp Coconut oil, 0.5 tsp cinnamon, 1 tsp Flavor KickHeat the coconut oil in a pan on medium-high. Add the apple cubes, cinnamon, and Flavor Kick. Saute for 5-10 minutes.

Divide the pumpkin pie overnight oats mixture into two bowls or Mason jars. Top with the apple-cinnamon compote.

Serve with coconut yogurt, nut butter, granola, and pomegranate seeds as desired.
