0.5 white onion
1 small carrot
1 small stalk celery
1 medium potato
200 g tomatoes
2 tbsp olive oil
50 g peas (frozen or canned)
1 sprig rosemary
600 ml vegetable broth
100 g white beans

This minestrone is more than a boring vegetable soup. Our minestrone has a special surprise: our very own Protein Pasta. Boasting 4x as much protein as conventional pasta, it’ll turn your bowl into a real soup for fitness.

Preparation

  • Dice the onions, carrots, celery, and potatoes into cubes. Quarter the tomatoes.
  • Heat the olive oil in a pot on medium heat. Add the onions, carrots, and celery to the pot and cook until their colors change.
  • Add the potatoes, tomatoes, peas, and rosemary to the pot. Saute for 3 minutes on medium heat.
  • Deglaze the pot with the vegetable broth and simmer for 10 minutes.
  • Finally, add in the beans and simmer for another 10 minutes.
  • Pour in the Protein Pasta. Cook for another 7-8 minutes until the noodles are just al dente.
  • Serve the minestrone into bowls. Season with salt, pepper, and parsley.
  • Enjoy!
