2 very ripe bananas
280 g soy milk
120 g unsweetened applesauce
100 g coconut blossom sugar
220 g whole-grain spelt flour
60 g e757
2 tsp baking powder
optional 1 Banane als Topping

Fluffy, moist and just the right amount of sweetness: that’s how we like our vegan banana bread. Animal products can easily be replaced with plant-based alternatives. The chia seeds stand in for the egg. Applesauce takes the place of butter, making sure it’s not too dry. And our Vegan Protein saves you using a handful of sugar, as well as flour. Now that’s a-peel-ing!

Preparation

  • Preheat the oven to 180°C.
  • Use a fork to mash the bananas in a bowl. Add the chia seeds, soy milk, applesauce, and coconut sugar. Mix well.
  • Add the flour, Vegan Protein and baking powder and mix into a batter.
  • Grease a loaf pan, or line it with parchment paper. Fill with the batter. If desired, slice a banana in half and press it into the top as decoration.
  • Bake the banana bread for 60 minutes. For the best results, cover with aluminum foil or parchment paper so the top doesn't darken too much. Test for doneness by sticking a toothpick into the thickest part of the bread. If it comes out moist but clean, the banana bread is done.
  • Let the vegan banana bread cool down a bit before cutting into slices.
