120 g low-fat fromage frais (quark) or Greek yogurt

Preparation

  • Put the Protein Pancake mix, water, and a pinch of salt and pepper into a bowl. Whisk until a smooth batter is formed.
  • Heat half of the coconut oil in a pan over medium heat.
  • Use a teaspoon of batter for each blini. Cook until golden-brown on the bottom, flip, and repeat.
  • After you've used up half of the batter, add the second half of the coconut oil to the pan. Continue cooking until you have 12 finished blinis.
  • Plate the blinis on a serving plate and add a teaspoon of low-fat fromage frais to each. Top with smoked salmon.
  • If you want, garnish the smoked salmon blinis with caviar, dill, and a spritz of lemon juice.
  • Enjoy!
