You eat with your eyes as well as your mouth – we know that much is true. These apple protein pancakes will wow your eyes before you even take your first bite, thanks to their looks!
In a bowl, whisk the pancake mix and the water until they form a smooth batter.
Heat the coconut oil over medium-high heat.
Slice the apple all the way through into thin slices (2-3mm thick). Choose the 4 best slices from the middle of the apple; remove seeds and stem.
Pour ¼ of the batter into the pan. Add ½ tsp of the Protein Cream in the middle. Place an apple slice on top and gently press it down.
Flip the pancake. Cook until golden-brown on both sides.
Repeat the process three more times to use the rest of the batter.
Now plate the 4 apple protein pancakes nicely. Garnish with cinnamon and more Protein Cream.
