Summery Strawberry Crepe Cake

For us, it’s what’s inside that counts. Our strawberry crepe cake looks like your usual frosted cake from the outside, but just wait until you slice into it and pull out the first slice. You’ll find the layers and layers of our fruity summer cake revealing themselves. The best part? Our milles crepes cake is high-protein, low-sugar, and packed with fruit.

Preparation

  • Ingredients:
    240 g Protein Pancakes, 300 ml water, 300 ml oat milk, 1 tsp Flavour Kick Vanilla
    Put the Vegan Protein Pancakes mix, water, and oat milk into a bowl. Stir well to create a smooth batter.
  • Ingredients:
    1 tsp Coconut oil
    Put a bit of coconut oil into a pan on medium heat. When it is warm, add the batter and cook the crepe for 3-4 minutes.
  • Flip the crepe and cook for another 1-2 minutes.
  • Repeat until you've used all the batter up to make crepes.
  • Ingredients:
    25 g strawberries
    Now make the frosting. Cut the strawberries into small pieces. Puree using an immersion blender.
  • Ingredients:
    200 g vegan cream cheese, 200 g vegan skyr yogurt, 1 tsp Flavour Kick Vanilla, 1 tsp lemon juice, Just Cashews, Coconut & Dates
    Put all the ingredients for the frosting into a bowl and whip until creamy.
  • Now assemble the mille crepes cake! Place one crepe on the serving plate, cake stand, etc. Cover with a layer of frosting. If you're in a nutty mood, add a half-teaspoon of Just Nuts spread on top of the frosting. Place another crepe on top of this layer and repeat the process with frosting (and Just Nuts) until you've used all the crepes. There should be a bit of frosting left over!
  • Cover the whole crepe cake with a thin layer of frosting.
  • Garnish the strawberry crepe cake with fresh strawberries and/or coconut chips.
  • Enjoy!
