This cranberry cake is a festive delight for your eyes and your tongue! That makes it the perfect accompaniment for any occasion. The cranberries keep the cake extra moist and lend it an incomparable sweet tartness. Meanwhile, our Instant Oats give their best nutty flavor. It can’t be beat! The recipe is vegan, contains no added sugar, and comes together with just a few ingredients.
Preheat the oven to 180°C.
Mix the oat flour, Flavor Kick, and baking powder in a large bowl.
Add the orange juice, sparkling water, applesauce, and (liquid) coconut oil. Stir until well-mixed.
Fold the cranberries into the batter, setting aside a handful to use as a garnish.
Line a loaf pan with baking paper. Put the cake batter into the pan. Gently press the remaining cranberries into the top of the cake.
Bake the cranberry cake for 55 minutes.
Set aside to cool for a few minutes. If you want, top with glaze and orange slices.
