You will need

85 g dry quinoa, rinsed
250 ml water
0.5 vegetable or chicken stock cube
200 g cherry tomatoes, quartered
200 g cucumber, diced
60 g rocket or baby spinach
50 g radishes, thinly sliced or quartered
30 g parsley, finely chopped
0.5 red onion, thinly sliced

Mediterranean Quinoa Salad

with cucumber, tomato and parsley

A perfect quinoa salad to make-ahead for picnics and summer lunches. Nutty quinoa is paired with chopped crunchy vegetables – tomato, cucumber and radishes, lots of fresh parsley and a high-protein salad dressing made using our neutral whey protein.

Preparation

  • Quinoa and water and stock into a pot. Bring to the boil then turn head down to low, simmer for 15 minutes until water is almost fully absorbed. Remove from the heat, cover with a lid, let stand for 5 minutes to absorb the remaining liquid. Uncover and spread out on a plate then let cool for at least 5 minutes.
  • Add the tomatoes, cucumber, rocket, radishes, parsley and onion to the plate of quinoa and toss together.
  • For the dressing, whisk the orange juice into the miso paste in a medium bowl until smooth. Add the whey protein and apple cider vinegar and whisk again until smooth and creamy.
  • Pour the dressing over the salad and toss to combine then serve immediately.
  • Enjoy!
You can easily boost the protein even higher in this salad by mixing in some crumbled feta cheese or shredded, cooked chicken breast.
