Vegan Florentine Cookies

Crispy, chocolatey, and nutty: These vegan Florentine cookies give you everything you could need in a cookie. To make sure every single guest at your house can enjoy them, we’ve made sure they are vegan, low in sugar, and gluten-free.


  • Preheat the oven to 160°C.
  • Ingredients:
    2 tbsp Coconut oil, 0.5 tsp cinnamon, 1.5 tsp Flavour Kick Vanilla, 3 tbsp coconut blossom sugar, 2 tbsp soy cream
    Melt the Coconut Oil, cinnamon, Flavor Kick and coconut blossom sugar in a small saucepan, then add the soy cream.
  • Ingredients:
    200 g flaked almonds, 25 g Instant Oats
    Add the flaked almonds and Instant Oats and combine everything.
  • Spread the florentine mixture on a baking tray lined with baking paper and bake at 160°C for 10 min. If you want, you can drizzle the maple syrup over the tops of the cookies to help them bake up darker and crispier.
  • Remove the baking tray from the oven and allow to cool briefly.
  • Cut the dough into small squares while it is still warm.
  • Ingredients:
    75 g dark chocolate
    Melt the dark chocolate over a water bath and dip each of the florentine cookies halfway into the chocolate.
