1 tbsp nutritional yeast flakes

Preparation

  • Cook the pasta according to package directions. Set aside some of the cooking water from the pasta.
  • Meanwhile, cut the smoked tofu into cubes.
  • Heat the olive oil in a pan over medium heat. Cook the tofu cubes until crispy.
  • Add the plant-based cream and bring to a simmer. Stir in the nutritional yeast flakes. Season with salt and pepper.
  • Add the pasta to the pan and mix well. Finish with a splash of the pasta cooking water to thin the sauce, and heat again.
  • Serve the vegan carbonara. Garnish with parsley if desired.
  • Our Tip:If you want, you can blend a handful of cashews with a pinch of nutritional yeast flakes and salt to make a vegan parmesan topping. The perfect finish to your carbonara!
