Vegan Protein Crêpes

Are you in the mood for vegan crêpes? All you need is four ingredients and a pan. This basic recipe for vegan crepes doesn’t need a professional chef. Far from it! Our vegan pancake mix makes it a breeze: just stir together powder and liquid. Whether for breakfast or dessert – you don’t need to think twice about the nutrition facts of these crepes. We don’t use gluten. Nor added sugar. What we do use is the best plant-based protein to give you the fluffiest protein crepes you can imagine.
Preparation

Add the pancake mix and water to a shaker or a bowl. Mix well until a smooth, liquid batter is formed.

Melt half the coconut oil in a pan over medium-high heat.

Pour half of the batter into the pan and spread all around the pan. Cook for 3-4 minutes. Loosen the edges with a spatula.

The best way to flip the crepe is to use a flat plate. Slide the crepe from the pan onto the plate. Then place the pan upside down over the top of the crepe, and flip both plate and pan together so the uncooked side of the crepe lands back in the pan. Cook for 1-2 minutes more.

Melt the rest of the coconut oil in the pan. Pour the rest of the batter into the pan and make the second crepe.

Top the vegan protein crêpes with the toppings of your choice. They taste fabulous with powdered sugar and fresh fruit.
