Vegan Protein Pasta with Radicchio and Walnuts
a great pasta dish for cold winter days
Radicchio is a star for winter salads, but it can do so much more. You can saute these leaves and serve them with pasta or rice. The heat from sauteing, by the way, reduces the bitter flavor. Stirred up with oat-based cream, this delicious vegan pasta with radicchio comes together in less than 30 minutes.
Preparation

Bring a pot of water to the boil.

Dice the onions. Wash the radicchio and remove the bitter white stem in the middle. Cut into thin strips.

Heat the olive oil in a pan.

Add the onions to the pan and saute until they lose their color. Add ¾ of the radicchio and saute on medium heat for 5 minutes. Season with salt and pepper.

As soon as the water is boiling, add salt and Protein Pasta. Cook 7 minutes, until the pasta is cooked al dente.

Meanwhile, add the oat cream to the radicchio and bring to a simmer.

Drain the pasta, reserving the cooking water. Stir the pasta into the pan with the radicchio. Add a splash of the cooking water to thin out the sauce. Bring the sauce back to a simmer.

Serve the pasta with radicchio on plates or bowls. Top with walnuts and the reserved fresh radicchio leaves.
