Winter Buddha Bowl

There’s no limit to how often you can dive into a bowl packed with amazing vegetables. The bright colors will also brighten up the gray weather! This buddha bowl is simply amazing for your body and your tastebuds, too! And an extra bonus? Pop it into a take-along container and it’s also a perfect lunch to take along with you whether you’re in the office or out and about.

Ingredients

  • 1 handful
    fresh baby spinach
  • 100 g
    broccoli
  • 50 g
    sugar snap peas
  • 80 g
    brussels sprouts
  • 100 g
    red cabbage
  • 0.5
    avocado
  • 1
    radish
  • 30 g
    pomegranate seeds
  • 50 g
  • 1 slice
    Protein Bread

Preparation

    Prepare the broccoli, brussels sprouts, and sugar snap peas: Either blanch them briefly in boiling water (then drop into an ice water bath) or roast in the oven for 20 minutes at 200°C.

    Make the beetroot hummus. The more beetroot you use, the pinker the hummus will be.

    Put the baby spinach into a large bowl. Spread the other ingredients on top of it.
