No question, our Protein Porridge tastes great just the way it is. But it’s even more fun to eat breakfast when it looks extra special every now and then. A handful of blueberries bring not only extra color to your bowl, but also a dose of good nutrients! This porridge cuts down on your time and your added sugar levels, and gives your body what it needs for a smooth start to the day.
Put half of the blueberries in a pot along with a splash of water. Cook over medium heat for 3 minutes. Squish the blueberries with a fork to break their skins and let the color out into the water.
Reduce the heat to low. Add the rest of the water to the pot. Add the Protein Porridge. Cook, stirring constantly, for 3 minutes until thickened.
Move the blueberry porridge to a bowl. Gently stir in the yogurt with a spoon.
Top the porridge with the remaining blueberries. Sprinkle with pistachios.
Our tip: If you'd like, you can simmer the remaining blueberries with water as well, to create a thick blueberry sauce.
