For an easy, light dinner, try these Thai-style chicken lettuce wraps, flavoured with green Thai curry paste and served in a crunchy lettuce cup with cucumber, mint and coriander. Heat the coconut oil in a large, non-stick frying pan over a medium heat. Add the curry paste and stir into the oil, cooking for 1 minute until fragrant. Add the chicken mince and cook, breaking the mince up as you stir, until cooked through then remove from the heat. Taste and season with salt, if needed.
Fill the lettuce leaves with the chicken mince and top with the cucumber, coriander and mint. Serve the chicken lettuce wraps with the lime wedges for squeezing and our sweet chilli sauce (see intro for recipe link) for drizzling.
Tou can use other curry pastes here for a different flavour e.g. Massaman curry paste or red Thai curry paste. Many supermarkets sell these pre-made which is so convenient for adding rich flavour to simple recipes like this.
