1 tsp paprika
2 tsp ground cumin
1 tbsp tomato paste
1 tbsp soy sauce
maple syrup
2 tbsp hot sauce of your choice (e.g. Sriracha or Tapatio)

lime (juiced)
6 small corn tortillas
handful red cabbage, shredded
cilantro (coriander leaves), soy yogurt, lime juice

Preparation

  • Drain the can of jackfruit and pull into small pieces with your hands. Discard the hard part at the end.
  • Warm the coconut oil in a pan on medium-high heat. Cook the jackfruit until it turns golden-brown.
  • Season the jackfruit with cumin and paprika. Add the tomato paste, soy sauce and maple syrup and cook for another few minutes.
  • For the dressing: Mix all ingredients in a bowl.
  • Quickly warm the tortillas in a warm oven or pan.
  • Fill the tortillas with jackfruit, red cabbage and coriander. Top with the peanut sauce, some soy yogurt and lime juice.
