For the filling:
400 g fresh tomatoes (heirloom, coeur de boeuf, etc)
1 clove garlic
100 g vegan cream cheese
1 tbsp agave syrup or maple syrup
4 sprigs fresh thyme
4 sprigs fresh basil
salt, pepper

A crispy base, overlaid with cream cheese and juicy tomatoes. Could anything sound better than our tomato galette? When the weather starts to warm up, we go all-in for ripe tomatoes, bursting with aroma, and this recipe truly lets them shine. Apart from the tomatoes, you only need a few other ingredients, making this the perfect spring or summer recipe to whip up in a flash. Our ingenious Protein Pizza mix saves you the trouble of buying and mixing up the base for yourself, and get started right away.


  • Ingredients:
    150 g Protein Pizza, 150 ml warm water
    Mix the Protein Pizza mix and water in a bowl. Knead until they form a dough. Set aside.
  • Ingredients:
    400 g fresh tomatoes, 1 clove garlic
    Slice the tomatoes thinly. Chop the garlic.
  • Dust your working surface with flour. Roll the dough out into a thin circle. Use a rolling pin or press and shape with your hands.
  • Preheat the oven to 180° C.
  • Ingredients:
    100 g vegan cream cheese
    Spread the cream cheese on the pizza crust. Leave about 2cm of free space around the edge of the crust.
  • Ingredients:
    2 sprigs fresh thyme, 2 sprigs fresh basil,  etwas salt, pepper
    With your hands, strip half of the herbs from their stems. Tear into smaller pieces, if desired. Spread the garlic and the herbs evenly over the cream cheese. Season with salt and pepper.
  • Ingredients:
    1 tbsp agave syrup
    Now place the tomato slices evenly over the crust, overlapping each one slightly over the one before it. Drizzle the agave syrup over the tomatoes.
  • Gently fold the edge of the crust towards the inside of the tomato galette. Bake your tomato galette for 40-45 minutes, until crispy. To check for doneness, use a knife to gently lift one edge and see if the bottom looks done. If it's not, leave in the oven for a few more minutes.
  • Ingredients:
    2 sprigs fresh thyme, 2 sprigs fresh basil
    Sprinkle the rest of the fresh herbs on the top of the tomato galette. Slice and serve.
