Fruity Cherry and Waffle Protein Parfait

Waffles topped with gooey-warm cherries are a perfect wintry comfort desert. So when cherry season rolls around in summer, we dive straight for a refreshing breakfast to start our day full of energy! Our protein parfait with crispy waffles and a sweet-tart cherry compote gives us a chance to enjoy our favorite warm winter dessert as a cold, high-protein, and vegan breakfast on warm summer days!

Preparation

  • Ingredients:
    150 g cherries, 20 ml lemon juice, 0.25 tsp Flavour Kick Vanilla
    First make the cherry compote. Put all the ingredients for the compote into a small pot and simmer for 10-15 minutes. Remove from the heat and set aside to cool.
  • Ingredients:
    0.5 tbsp White Chia Seeds, 75 ml oat milk, 35 g unsweetened applesauce, 1 tbsp Just Cashews, Coconut & Dates, 0.5 tsp baking powder, 0.25 tsp Flavour Kick Vanilla
    Meanwhile, put all the ingredients for the waffles into a bowl and mix well until you have a smooth batter.
  • Ingredients:
    0.5 tsp Coconut oil
    Grease the waffle iron with coconut oil.
  • Pour half of the waffle batter into the hot waffle iron and cook until crispy.
  • Repeat the process with the second half of the waffle batter.
  • Ingredients:
    100 g soy quark or soy yogurt, 0.5 tsp lemon juice, 1 tsp Vegan Protein Vanilla, lemon zest
    Put all the ingredients for the lemon cream into a bowl. Stir well.
  • Now assemble the parfait: Cut the waffles into bite-size pieces. Put a few pieces into each glass. Then top the waffle pieces with a dollop of lemon cream, followed by a layer of cherry compote.
  • Repeat the layers until all parts are used up.
  • Decorate your protein parfait with fresh cherries as desired.
  • Enjoy!

You can change the fruits in your protein parfait to fit the seasons! Whip up your compote using fresh strawberries, sour rhubarb, or juicy apples.
