Protein Raspberry Mojito Ice Cream

We’re starting to see the first signs that summer is coming to an end. Autumn is just around the corner. We can’t wait for a new slate of fall fun, but at the same time, we wanna hold onto that summer feeling for as long as we can. So we’ve whipped our Raspberry Mojito Clear Whey into a recipe for high-protein ice cream that’s absolutely perfect as a sweet little afternoon snack.
Preparation

Ingredients:250 ml water, 150 g steviaPut the stevia and half of the water into a small pot. Put on the stove over medium heat. Stir constantly until the stevia has completely dissolved.

Ingredients:15 g mintDice the mint and add it to the pot.

Bring the water, mint, and stevia mix to a boil. Reduce the heat and simmer for about 5 minutes. Then remove from the heat and set aside to cool for about 10 minutes.

Ingredients:250 ml water, 45 g Clear Whey - Raspberry MojitoNow put the remaining water and the Clear Whey into a shaker. Shake until well mixed.

Ingredients:60 ml lime juice, 2 limes (zested)Add the Clear Whey, lime juice and zest to the stevia mix. Stir well.

Put the liquid into a freezer-safe container. Freeze for at least 8 hours.

When serving, garnish with fresh mint and raspberries as desired!
