Chocolate Chia Pudding Ice Cream (No-Churn)

If you’re not a fan of the texture of chia pudding, try this blended version which is frozen & blitzed up to make a creamy chia pudding ice cream. Flavoured with chocolate whey protein for a high-protein sweet and chocolatey dessert. Top with sprinkles and more chia seeds for crunch.

Ingredients

2 Persons

  • 30 g
    foodspring chocolate whey protein
  • 40 g
    chia seeds
  • 120 g
    0% fat Greek yogurt
  • 180 ml
    skimmed milk
  • 2 tbsp
    unsweetened cocoa powder

Preparation

    Combine all the ingredients in a bowl and whisk to combine. Set aside for 5 minutes to thicken then pour into a food storage container or ice cube tray and freeze for 3-4 hours until solid.

    Remove the frozen chia pudding from the freezer. If you used a food container, pop out the brick of frozen chia pudding and allow to thaw for 10-20 minutes until softened enough to cut into ice cube-sized chunks. If you used an ice cube tray, pop all the cubes out.

    Add the cubes of frozen chia pudding to a high speed blender and blitz until smooth and creamy – you may need to use the tamp that came with the blender to help it along. Otherwise you may need to stop to scrape down the sides occasionally.

    Once smooth, divide between bowls. Add any toppings you like and serve the chia pudding ice cream immediately.
