As soon as the first rays of spring sun start to shine, there’s one sweet treat we can’t get off our minds: carrot cake! We’re going to show you how to make healthy carrot cake energy balls. They’re the perfect snack for whenever, whether you need a quick boost to beat off the afternoon slump or an extra something before – or during – your workout. With their super-clean ingredients, you’ll know exactly what’s going into your body.

Preparation

  • Ingredients:
    70 g carrot
    Grate the carrot with a fine grater.
  • Ingredients:
    30 g oatmeal, 80 g walnuts, 60 g dates, 30 g Vegan Protein Vanilla, 2 tbsp water, 1 tsp cinnamon, 0.5 tsp powdered ginger, 1 pinch nutmeg
    Add all ingredients except the coconut flakes together in a high-powered blender or food processor. Mix until they form a consistent, sticky texture.
  • With moist hands, form the mix into 12 balls of equal size.
  • Ingredients:
    3 tbsp coconut flakes
    Roll the carrot cake energy balls in the coconut flakes to coat them.
  • The carrot cake energy balls will stay fresh in the fridge for about a week.
